Salt free recipe: Homemade Tuscan Bread

We want to surprise you giving you a recipe that is missing one of the most abundant ingredients in the kitchen: salt. For those with health conditions, such as hypertension, or for other reasons, there are still many people who prefer a low-salt diet. Well want to know a secret? Many foods can be really delicious even without SALT. We offer you a recipe for a typical dish of the cuisine of central Italy, in particular Tuscan cuisine, here is the recipe of the Tuscan homemade bread.

INGREDIENTS (for 2 loaves)

  • 40 ml of water
  • Olive oil
  • 50 g flour 


Form a pyramid with the flour and pour in about half of the water available and a teaspoon of oil. Bring the rest of the flour towards the center of the mound and start to knead, adding more water each time.

Once you have a firm dough, knead it and pull it for about 10 minutes. Form a ball, grease it with oil and wrap in plastic wrap.

Let the dough rest for about an hour, away from direct heat sources.

After leaving to rest, divide the mixture into 2 disks, roll it out, dredge in flour and brush with a little oil.

At this point you have to perform two firings: the first in a pan, brushed with oil before to preheat. Arrange the disks and cook for about 3 minutes on both sides by covering with a lid.

The second firing is performed in an oven at 220 ° for about 7 minutes without turning.

They should be served warm and accompanied with chopped vegetables or fine tomatoes. They can also be eaten with a bitter homemade orange marmalade.

Recent studies have shown that our diet is too rich in salt: according to experts, we consume up to 10 g of salt when the maximum recommended dose reaches 4-5 g!

Among the consequences of an excessive use of salt include:

The food industry is full of high-salt products, but the World Health Organization (WHO) has recently launched an appeal to the population to not take salty foods in quantities greater than recommended, suggesting instead to use alternative products to salt to season their dishes. Among the most used alternatives include soy sauce, obtained by fermentation of wheat toast, water and koji and much appreciated especially by lovers of Japanese cuisine, the effective celery salt, which helps blood pressure and aids digestion, and spices such as coriander, turmeric and sage that give flavor to foods without causing harmful effects to our health.
