Here's how to prepare a tasty carrot risotto!

Ingredients (for 4 people):

  • 500 ml of vegetable broth
  • 1 shallot
  • 300 grams of rice
  • 1 lump of margarine
  • 1 tablespoon extra-virgin olive oil
  • Salt and Pepper To Taste
  • 2 large carrots (or three small)
  • 1 tablespoon of parmesan (optional)

Method:

Start preparing the sauce for risotto. To do this, peel and chop the shallots and place in a pan with a little oil.

Meanwhile, bring the vegetable broth to a boil. Wash, peel and slice the ​​carrots and cook in the broth. Once cooked, set them aside and add the broth to the rice.

Pour the rice into the pan and leave it over a flame for a few minutes.

Begin to pour in the broth; whenever the rice dries out, add some more broth and leave for a little longer.

Puree the carrots that you had put aside until you have a thick sauce

When the risotto is half cooked, add the carrot sauce and finish cooking.
